No party without a party bread. By brainstorming and cooking many creative ideas had been implemented in the new Chef’s Handyman e-cookbook ‘Party Breads’. Before publish a new book we wanted to make sure, that all new recipes had been tested by friends. Therefore we have baked about 40 different breads. The test event was very successful. The new ideas and tastes were very welcome by our testers. The positive feedback sparked our motivation for new themes, new recipes and the next event.

The new Chef’s Handyman e-cookbook ‘Party Breads’ is now available in Apple’s iTunes store. See under Chef’s Handyman.

The following breads were the tester’s favorites: Bread with Dried Figs and Orange Rind, Camembert Bread, Bread with Smoked Ham and Garden Garlic, Pesto Bread, Greek Bread, Apple Plum Bacon Bread, Ginger Bread and Orange Bread.

Rose Cookies

The sweet breeze of roses give these cookies a special taste. Try them with a cup of tea or coffee.

Makes about 40 cookies: Chop dried rose petals. Mix soft butter (room temperature), 2 tbsp. of chopped rose petals with all other ingredients. Knead until combined. Form two rolls. Cover rolls with plastic wrap. Cool in fridge for 1 hour. Remove plastic wrap. Turn roll in 3 tbsp. of chopped rose petals. Cut rolls into slices of 0.2 inches.

Cover baking sheet with parchment paper. Bake cookies in oven at 350°F (180°C) for 10-15 minutes.

Tip: Bake cookies in advance. The flavor will be more intensive the day after. Dried rose petals can be bought in spezialized stores.

Shopping List:
Baking Ingredients: 3 oz sugar, 5 tbsp. dried rose petals, 3 tbsp. spicy sugar
Flour: 8 oz bleached flour
Dairy Products: 7 oz butter
Spices: 1 tsp. fleur de sel

Tomato Bread

Great bread as side dish or for aperitif.

To make dough: Soak fresh yeast and 1 tsp. of sugar in lukewarm water (16 fl.oz.). Place flour 3 tsp. of sea salt, 4 tbsp. of olive oil and yeast water in a bowl. Combine all ingredients. Place dough in a bowl. Cover bowl with tea towel. Keep warm until dough has doubled in size. (approx. 60 minutes or longer).

Tip: Allow the dough to double in size overnight. Finish the bread in the morning.

Spread dough out. Cut dried tomatoes in pieces. Chop rosemary. Apply tomatoes, rosemary and chili flakes on top of the dough. Fold dough and twist it.

Bake in oven at 475°F or 240°C for 20-30 minutes or baked through. Cool on wire rack. When formed 3 breads, bake for 15-18 minutes.

Baking Ingredients: 1 tsp. sugar, 1.5 oz yeast (fresh)
Flour: 2 lb white flour
Spices and Herbs: 1 bunch rosemary, 1 tsp. chili flakes, 3 tsp. sea salt
Oil, Water: 16 fl. oz lukewarm water, 4 tbsp. olive oil
Dried Fruits and Vegetables: 5 oz dried tomatoes

Cucumber Potato Salad

The right dish for hot summer days! Wash fresh fruits and vegetables carefully!

Boil potatoes in pan with a cup of salt water and laurel until soft. Cool and cut in pieces.

Cut cucumber with peeler in wafer thin stripes, pears and celery stalks in small pieces. Place cucumber, pears, celery and potatoes in a bowl. Add grated ginger.

To make dressing, combine sour cream, 1 tbsp. of olive oil, 1 tbsp. of raspberry vinegar, salt and black pepper. Mix salad with the dressing.

Shopping list, for 4 persons:
Vegetables: 1 cucumber, 4 oz celery stalks, 16 oz potato (es)
Oil, Vinegar, Water: 1 tbsp. raspberry vinegar, 1 tbsp. olive oil
Spices: Black Pepper, salt, 1 oz fresh ginger root, laurel
Dairy Products: 6 oz sour cream
Berries, Fruits: 2 pears

Business-Menu! The new e-cookbook from Chef’s Handyman!

Business-Menu, the new e-cookbook from Chef’s Handyman is available.

Not all day a sandwich to go! Healthy, easy, fast is the motto of this new e-cookbook. Dishes will be prepared and served within no time. Some of the recipes can be transformed into late night dinners as well. All recipes are easy to follow. Many of the ingredients might be already on stock or can be found in several stores. Fish and meat dishes are quick to prepare, simple to cook and delicious in taste. The ideal menues for busy days!

Lentil Salad

Flowers are so bright and colorful. Many of them are eatable and give the dishes a special touch.

Recipe for lentil salad: Cook red lentils with water (approx. 2 cups) for 8 minutes and green lentils (2 cups of water) for 15-20 minutes or until cooked through. Drain and cool.

Tip: Do not cook lentils with salt, lentils cooked with salt do not cook through.

Place lentils, sweet corn, red beans, bell pepper pieces and rocket in a bowl. Add yoghurt.

To make dressing: Combine salt, black pepper, 1 tsp. of curry powder, 1 tsp. of curcuma, 1 tsp. of honey, 1 tbs. of cinnamon powder, 8 tbsp. of olive oil, lemon juice, 2 tbsp. of balsamic vinegar and cayenne pepper. Sprinkle dressing over salad and toss lightly.

Serve salad on plates. Garnish with nasturtium.

Tip: If no nasturtium is available substitute with other eatable flowers or with herbs.

Shopping list, for 4 persons:
Pulses: 5 oz red lentils, 5 oz green lentils, 4 oz red beans
Fruits, Vegetables: 4 oz sweet corn, 1 bell pepper, 1 lemon
Salads: 2 oz rocket, 12 nasturtium flowers
Spices: 1 tsp. curry powder, 1 tsp. curcuma, salt, black pepper, cayenne pepper, 1 tsp. cinnamon powder
Oil, Vinegar: 8 tbsp. olive oil, 2 tbsp. whithe balsamic vinegar
Dairy Products: 6 oz plain yoghurt
Baking Ingredients: 1 tsp. honey

Green Power

Great in taste, a delicious drink!

Peel cucumber. Cut in half and remove seeds. Then cut half in pieces. Peel apples. Remove core. Cut apples in pieces. Cut avocado in half. Remove seed. Take out avocado pulp. Peel kiwis. Place all ingredients in a pitcher. Add lemon juice and cold green tea. Mix all ingredients with a hand blender.

Shopping list, for 4 persons:
Vegetables: 2 cucumbers
Berries, fruits: 2 avocados, 2 apples, 2 kiwis, 1 lemon
Tea: 16 fl oz green tea

Raspberry Dream

Raspberries are my favorite berries. Raspberries together with vanilla ice cream is just a dream.

Combine cream, eggs, vanilla sugar, flour and a pinch of salt. Butter 4 small oven-saved baking cups or tins. Place egg mixture in baking dishes. Add raspberries on top. Bake in oven at 180°C or 350°F for 25-30 minutes or until golden. Serve lukewarm with a scoop of vanilla ice cream.

Tip: Substitute raspberries with other berries or fruits in season.

Shopping list, for 4 persons:
Dairy Products: 8 fl oz cream single or medium
Flour: 1.5 oz bleached flour
Eggs: 2 eggs
Spices: 2 pinch salt
Baking Ingredients: 1.5 oz vanilla sugar
Berries, Fruits: 8 oz raspberries
Ice Cream: 7 oz vanilla ice cream

Date Rolls with Cardamom

These date rolls are easy to make and delicious in taste.

Pit dates and cut them into small slices. Simmer butter in a saucepan. Place butter, curd cheese and sugar in a bowl and mix until combined. Add all remaining ingredients and knead them. Form roll and cut roll into 8-10 pieces. Form small rolls. Prepare baking sheet with parchment paper. Place rolls on baking sheet.

Melt 1 tbsp. of butter. Add milk. and whisk together. Apply the milk and butter mixture to the top of each roll.

Bake in oven at 190°C (375°F) approximately 25 minutes in the preheated oven or until date rolls are golden.

Nuts, Dried Fruits and Vegetables: 5.5 oz dates
Baking Ingredients: 2.5 oz sugar, 2 tsp. baking powder
Spices: 2 tbs. of cardamom powder
Flour: 9.5 oz bleached flour
Dairy Products: 9.5 oz curd cheese, 2.5 oz butter, 4 tsp. milk

Yellow Power Drink

What about banana and curry? The sweet and spicy taste of this drink is very refreshing. This drink is my favorite one.

To make yellow power drink, place banana pieces, coconut milk, milk, curry paste cinnamon powder, yoghurt and pear pieces in a jug or pitcher. Mix with a hand blender all ingredients. If the texture is too thick, add more milk. Cool drink in fridge.

Serve yellow power drink in glasses, garnish with whipped cream.

Berries, Fruits: 2 bananas, 2 pears
Asia Ingredients: 7 fl oz coconut milk
Dairy Products: 16 fl oz milk, 6 oz yoghurt, 4 fl oz whipped cream
Spices: 0.5 tsp. Indian curry paste, cinnamon powder
