Marianne’s family loves extraordinary tastes, especially for marmalades and jams. She is keen on trying new recipes whenever she finds time to produce new flavors and combinations. So I get from her new delicious recipes for the Chef’s Handyman recipe blog. My mother is also a great jam producer. She likes more the fruity fresh tastes and Marianne is an expert in non-traditional combinations.

Chef's Handyman, recipe blogWhen Marianne visited me at home and was explaining her new creations, my family members where extremely unsure about the result. Orange and bell pepper as jam! None of us could have any idea about the taste. But when we all tried her new experiment, we all were very surprised and delighted. What a great marmalade recipe for the Chef’s Handyman recipe blog! This jam can also be used as chutney for Indian dishes or as topping for soft cheese.

Chef’s Handyman cooking recipe for 4 persons: Orange bell pepper marmalade.

Chef's Handyman, recipe blogTo make jam: Cut 1 red or yellow bell pepper in pieces. Add 2 tbsp. of orange peel. Peel oranges. Cut oranges and fresh ginger root in pieces. Mix all ingredients in a cutter or mix with a hand blender. To give flavor, pound 1 tbsp. of black pepper in the mortar. Add pepper to the mixture. All ingredients should have a weight of approx. 750 g or 24 Oz. If not so add more orange or fill up with orange juice. Add 600 g or 18 Oz. of sugar and 1 tsp. of Agar Agar. Preserving or jam sugar will be fine as well.

Bring to the boil. Leave for 5-10 minutes. When jam gelatinizes, fill up in jam glasses. Close them. Turn glasses upside down. Leave for 5 minutes. Turn back. Cool jam.

Shopping list for 4 persons:
Vegetables: 1 red or yellow bell pepper
Fruits: 3-4 Oranges
Spices: 1 tbsp. black pepper, 0.5 Oz. fresh ginger
Baking Ingredients: 1 tsp. Agar Agar, 18 Oz. sugar, or 18 Oz. of jam or preserving sugar

Chef's Handyman, recipe blogSome like loafs, some do not! I like them very much. All creativity can be combined in that type of cake. There are so many possibilities. Nuts, fruits, chocolate or sweet and spicy ones, nearly everything can be mixed together. Baked as loaf or muffin both variations are fine.

Cream gateaux look nice, but are so sweet and heavy. Whenever I can choose, I would prefer a loaf for coffee or tea.

Chef’s Handyman cooking recipe for 4 persons: Orange loaf with olive oil!

Chef's Handyman, recipe blogCombine 10 Oz.  of sugar, 2 tbsp. of vanilla sugar, 1 tbsp. of orange blossom water, 4 eggs, 3 Oz. of olive oil and 3 tbsp. of orange marmalade until creamy and light. Add orange rind. Peel orange and mix with a hand blender. Add orange mixture. Add 10 Oz. of flour and 1 tbsp. of baking powder. Combine all ingredients.

Prepare 9 inch loaf pan with baking powder or crease with liquid butter. Add dough. Bake in oven at 180°C or 350°F for 50-60 minutes or until cooked through and golden.

Cool on wire rack. Dust with powdered sugar.

Baking Ingredients: 10 Oz. sugar, 2 tbsp. vanilla sugar, 10 Oz. flour, 1 tbsp. baking powder, 3 tbsp. powdered sugar
Blossom water: 2 tbsp. orange blossom water

The color is from light orange until deep red. The taste of the rind does underline the fruity flavor in desserts and cakes or salads. The fruit flesh is great for chutneys or marmalades.

Orange slices will be caramelized. Black pepper with juniper will give a spicy note. Oranges with scampi and goat’s cheese, three different ingredients what a great combination!

Chef’s Handyman cooking recipe for 4 persons: Orange scampi tower.

Cut filo pastry in squares. Apply liquid butter and pepper. Pile with another pastry sheet. Bake in oven about 5-8 minutes until golden. Take out and cool.

Chef's Handyman, recipe blogCut 2 oranges (organic) in thin slices. Melt 4 tbsp. of powdered sugar in non-stick frying pan. Add orange slices and 1 tbsp. of butter. Ground black pepper and juniper in mortar. Season the slices to taste with the black pepper juniper mixture. Simmer for 2 minutes. Take orange slices out and cool.

Add 2 tbsp. of butter in the frying pan. Add orange rind and the scampi. Simmer scampi for 5 minutes. Season the scampi with salt and black pepper.

Turn goat’s cheese in black pepper. Pile Filo pastry sheets, orange slices, goat’s cheese and scampi. Garnish with chives.

Herbs: 1 bunch chives
Spices: Black pepper, 5 dried juniper, salt

Chef's Handyman, recipe blogI love stir-fry dishes. There are so many different variations to cook. Stir-fries are easy to prepare. As ingredient each vegetable or meat can be taken. I always have bell pepper and spring onions on stock. These are my favorite vegetables for Asian meals. Also carrots or beans can be used. It is just a question of flavors and the taste. Chef’s Handyman cooking recipe for 4 persons: Chinese noodles with chicken and vegetables.

Bring 64 fl. oz. of water to the boil. Add egg noodles. Remove pan from heat. Cook noodles for 4-5 minutes or until al dente. Drain noodles.

Cut spring onions and bell pepper in small pieces. Wash bean sprouts.

Cut chicken breast in small cubes season to taste with garlic powder, cinnamon, jeerea, salt and black pepper. Heat frying pan. Add 4 tbsp. of olive oil then add chicken breast. Broil meat. Add spring onions and bell pepper. Season to taste with salt and black pepper. Add bean sprouts and 5 tbsp. of soy sauce. Add noodles. Combine all ingredients. When too dry add more soy sauce.

Serve noodles in preheated bowl. Garnish with cilantro.

Asia Ingredients: Soy sauce, 8 Oz. Chinese egg noodles
Vegetables: 2 bunches spring onions, 1 bell pepper, 8 Oz. bean sprouts
Chicken: 13 Oz. chicken breast
Spices: Salt, black pepper, cinnamon, garlic powder, jeera
Herbs: 1 bunch cilantro

Chinese salad with tuna and cucumber, a new cooking recipe for the Asian serial published in the Chef’s Handyman recipe blog.

Chef's Handyman, recipe blog‘East meets west’, like Chinese egg noodles with a French mayonnaise mustard dressing. A great salad!

Meals which can be prepared in advance are very comfortable. Chinese egg noodles are cooked through within no time. Cucumber and bell pepper will give color and the right twist. This salad is just delicious in taste. Macaroni can be used as well. I prefer the thin Chinese noodles.

Chef’s Handyman cooking recipe for 4 persons: Chinese salad with cucumber and tuna.

To make dressing: Combine 4 tbsp. of mayonnaise, 1 tsp. of mustard, 6 tbsp. of cream, 2 tbsp. of yoghurt, 0.5 of dill, grated lemon rind and 2 tbsp. of lemon juice and 2 tbsp. of white balsamic vinegar. Season the dressing to taste with salt and black pepper.

Bring 64 fl. oz. of water to the boil. Add egg noodles. Remove pan from heat. Cook noodles for 4-5 minutes or until al dente. Drain noodles. Quench with cold water. Place in a bowl.

Chop dill. Peel cucumber and cut in half. Remove seeds. Cut cucumber in wafer thin slices. Cut bell pepper in small pieces. Combine noodles, tuna, cucumber, dill and bell pepper. Add dressing. Season the salad to taste with salt and black pepper.

Chef’s Handyman tip: When stored in fridge, add dressing not before you intend to serve the salad.

Vegetables: 1 cucumber, 1 bell pepper

I did not know cold noodles. They looked like whole grain flour noodles, but soba noodles are made from buckwheat flour. They can be served warm and cold. The sauce for the noodles will be served in a separate bowl.

Soba can be found in several supermarkets or Asia stores. Soba noodles are a favorite dish in Japan, like hash browns in Switzerland, curry sausages in Germany or apple strudel in Austria.

In summer the cold noodles are perfect as lunch or snack in the office or at school.

To make sauce: Fill soy sauce in small cups. Chop spring onions, chili and bell pepper. Add half of vegetables.

Cut nori sheet in very thin stripes. Cut smoked tofu in small cubes. Place noodles in bowls. Add bell pepper, spring onions, tofu and nori.

Serve soba noodles with chopsticks, soy sauce and wasabi paste.

Tip: Use wasabi paste carefully. Wasabi paste is very hot.

Noodles: 13 Oz. soba
Vegetables: 1 bunch spring onions, 2 bell pepper, 1 chili
Tofu: 8 Oz. smoked tofu
Soy: 4 fl. Oz.

Chef's Handyman Recipe BlogThe season in between winter and spring is not my favorite one. The windy and cold weather make me longing for the faraway. Wanderlust to different countries, why not! If not travel around, maybe the taste of foreign countries can be captured in sandwich fillings? What about spicy Mumbai chicken curry rolls and tasty French bread?

Chef’s Handyman cooking recipe: Mumbai chicken curry rolls for 4 persons:

Cut chicken breast in small cubes. Season the meat with salt, black pepper, garlic powder, cinnamon and paprika. Heat olive oil in frying pan. Sear chicken pieces. Add 1 tbsp. of curry paste and 1 tsp. of chili flakes. When chicken cooked through, remove pan from heat. Add 5 tbsp. of yoghurt. Cut spring onions and pineapple in small pieces. Combine 4 tbsp. of pineapple and 2 tbsp. of spring onion pieces with the chicken curry mixture.

Cut rolls in half. Add filling. Close bread. Garnish with pineapple skewer.

Bread: 4 rolls
Meat: 13 Oz. chicken breast
Dairy Products: 5 Oz. yoghurt
Vegetables: 1 spring onion
Fruits: 1 pineapple
Spices: 1 tbsp. curry paste, black pepper, salt, paprika, garlic powder, cinnamon powder, 1 tsp. chili flakes
Oil: 2 tbsp. olive oil

Chef’s Handyman cooking recipe: Tasty French rolls for 4 persons:

Chef's Handyman Recipe BlogCut baguette in four pieces and then in half. Combine cream cheese and cottage cheese. Season the mixture to taste with salt and black pepper. Cut bell pepper in waver thin stripes.

Spread cream cheese mixture on baguette. Apply bell pepper, vegetable sprouts and smoked turkey. Close bread.

Bread: 1 large baguette
Dairy Products: 7 Oz. cream cheese, 1 cup cottage cheese.
Vegetables: 1 bell pepper, vegetable sprouts

Two new vegetarian recipes for the Chef’s Handyman recipe blog!

Chef's Handyman recipe-blogAlso vegetarian sandwiches can be varied and delicious in taste. The filling should not always contain meet. Fruity fillings and fillings with herbs will give the perfect flavor experience.

What about beetroot? Why do Australians love beetroot? When I was there on vacation each meal did contain beetroot. Beetroot for breakfast, beetroot for lunch and for dinner as well! Until today I did not get the point why. It will be highly appreciated if one of the Australian blog readers may give me an answer on that topic.

Actually I love beetroot as well. So I have combined them with orange. What about curry , apples and fennel?

Chef’s Handyman cooking recipe: Australian Turbo for 4 persons:

Dark bread is perfect for these sandwiches. Peel beetroot and cut in thin slices. Peel orange and cut in thin slices as well. Combine cream cheese with thyme and black pepper.

Cut rolls in half. Cover with beetroot slices. Then add cream cheese. Apply on the top orange slices. Close top with other half of bread.

Chef’s Handyman tip: If possible, use dark bread for this sandwich. Beetroot should be cooked through.

Bread: 4 rolls
Dairy Products: 5 Oz. cream cheese
Herbs: 1 bunch thyme
Vegetables: 2 beetroots
Fruits: 2 oranges
Spices: 1 tsp. of black pepper

Chef’s Handyman cooking recipe: Vegetarian sandwiches with curry and fruits for 4 persons:

Chef's Handyman recipe blogCut roll in half. Cut fennel an dapple in waver thin stripes. Sprinkle with lemon juice. Heat olive oil in frying pan. Add 1 tbsp. of curry paste and fennel stripes. Simmer for 3 minutes. Remove pan from heat. Add 2 tbsp. of yoghurt. Mix all ingredients. Season the fennel curry mix to taste with salt and black pepper.

Spread bread with cream cheese. Add fennel curry on top then add apple slices. Close roll with other half of bread.

Shopping list for 4 persons:
Bread: 4 rolls
Dairy Products: 7 Oz. cream cheese, 2 tbsp. yoghurt
Fruits: 1-2 apples
Vegetables: 1 fennel
Spices: Salt, black pepper, 1 tbsp. curry paste
Oil: 2 tbsp. olive oil

Delicious rolls for lunch! Chef’s Handyman for the recipe blog: For those who do not have time for lunch or don’t want to spend much time after sports or school.

Chef's Handyman, recipe blogI’m not a great sandwich eater, except the bread is fresh and crisp. The bread is very important for filled rolls. I do not like the flabby white bread. Second the filling must be special and tasty. If so than I love sandwiches to go.

Chef’s Handyman cooking recipe: Swiss rolls for 4 persons:

Use for this recipe cheese which is strong in taste. Grate cheese in rough pieces. Mix with mustard. Cut Bread in half. Apply herb butter than the cheese mixture. Add chopped spring onions and smoked ham. Close bread with other half.

Shopping list for 4 persons:
Dairy Products: 5 Oz. cheese, 4 tbsp. herb butter
Mustard: 1-2 tbsp. grainy mustard
Meat: 7 Oz. smoked ham
Vegetables: 1 bunch spring onions

Chef’s Handyman cooking recipe: Italian roll for 4 persons:

Chef's Handyman, recipe blogCut large baguette in four pieces than into half. Apply pesto butter. Cut mozzarella in slices. Apply slices on top. Then add smoked ham, dried tomatoes and rocket. Close with other half of baguette.

Chef’s Handyman tip: If no pesto butter is available. Mix pesto paste and butter.

Shopping list for 4 persons:
Bread: 1 baguette
Dairy Products: 1 Oz. pesto butter, 7 Oz. mozzarella
Meat: 7 Oz. smoked ham
Dried Fruits: 7 Oz. dried tomatoes
Salad: 2 Oz. rocket

Chef's Handyman recipe blogTo make drink: Peel 4 apples. Take out core. Cut apple in piece. Place pieces in measuring jug. Add 8 tbsp. of pomegranate juice, 4-5 peppermint leaves, 1 cup of yoghurt and 1 cup of apple juice. Mix all ingredients with the hand blender.

Herbs: 1 bunch peppermint
Dairy Products: 1 cup yoghurt
Juices: 1 cup apple juice, 8 tbsp. pomegranate juice
