Chef’s Handyman Tipp: Asia noodles light and delicious, the perfect snack!
The first time I ate soba noodles was in Tokyo, years ago. I did not know cold noodles. They looked like whole grain flour noodles, but soba noodles are made from buckwheat flour. They can be served warm and cold. The sauce for the noodles will be served in a separate bowl.
Soba can be found in several supermarkets or Asia stores. Soba noodles are a favorite dish in Japan, like hash browns in Switzerland, curry sausages in Germany or apple strudel in Austria.
In summer the cold noodles are perfect as lunch or snack in the office or at school.
Chef’s Handyman cooking recipe for 4 persons: Soba noodles with spring onions, nori and smoked tofu.
Bring water to the boil. Add noodles and cook for 5-6 minutes or until al dente.
Prepare large pot with ice water. Add hot noodles to cool. Drain noodles.
To make sauce: Fill soy sauce in small cups. Chop spring onions, chili and bell pepper. Add half of vegetables.
Cut nori sheet in very thin stripes. Cut smoked tofu in small cubes. Place noodles in bowls. Add bell pepper, spring onions, tofu and nori.
Serve soba noodles with chopsticks, soy sauce and wasabi paste.
Tip: Use wasabi paste carefully. Wasabi paste is very hot.
Shopping list for 4 persons:
Noodles: 13 Oz. soba
Vegetables: 1 bunch spring onions, 2 bell pepper, 1 chili
Tofu: 8 Oz. smoked tofu
Soy: 4 fl. Oz.
Asia Ingredients: 1 tbsp. wasabi paste, 1 nori sheet
