The perfect dinner! Chef’s Handyman weekend special for the recipe-blog: Vanilla risotto!
Risotto with vanilla! This version is really special. This risotto will be a very nice side dish with veal or as main course for vegetarians. The perfect dinner to share with friends!
I’m sure the guests will not bring the ingredients to light! The grappa e cardamomo will give a special spicy flavor and the vanilla an exotic touch. Nobody will expect vanilla in this meal!
A perfect dish for the weekend!
Chef’s Handyman cooking recipe for 4 persons: Vanilla risotto!
Chop onions. Heat olive oil in a pan. Glaze onions. Add rice and vanilla bean seeds. Deglaze rice with grappa e cardamomo. Add 1 cup of lukewarm vegetable stock at time, stirring continuously, until each portion of stock is absorbed and the rice is al dente. Reduce to medium heat. Simmer for 20 minutes. Cut taleggio cheese in pieces. Fold in cheese. Season the risotto rice to taste with salt and black pepper. To finish, fold in creme fraiche.
Serve in preheated soup plates.
Shopping list for 4 persons:
Rice: 400 g or 13 Oz. risotto rice
Drinks: 5 tbsp. Grappa e Cardamomo
Stock: 1 l or 32 fl. Oz. vegetable stock
Diary Products: 220 g or 7 Oz. Taleggio cheese, 7 Oz. creme fraiche
Vegetables: 1 onion
Oil: 3 tbsp. olive oil
Spices: Salt, pepper, vanilla bean
Chef’s Handyman tip: Serve risotto with veal tenderloin.
