Chef’s Handyman Christmas menus for the recipe blog! Today’s starter: Catfish wrapped in smoked ham with caramelized apple slices.
Only some weeks left until Christmas. The Christmas menus can be planned and prepared. December is usually a very busy time. I still love the pre-Christmas season. The weather is unexpected dry and mild. No snow yet. Christmas without snow is like a soup without salt. Santa Claus in front of the house without snow looks a bit silly. Nevertheless I have prepared together with Marianne two Christmas menus for the Chef’s Handyman recipe blog. One menu is for vegetarians. The other menu is with fish and meat. I will start in the Chef’s Handyman recipe blog with the starter for non-vegetarians.

Catfish wrapped in smoked ham with caramelized apple slices.
To make puff pastry trees, roll dough out. Press floured cookie cutter into dough. Bake puff pastry trees in oven at 200°C or 400°F for 10 minutes or until golden. Cool on wire rack. Dust with gold powder and powdered sugar.
Cut filets in half. Season the filets with salt and pepper. Cut spring onions in wafer thin stripes. Place spring onions on filets. Roll filets and wrap in smoked ham. Fix with a toothpick.
Heat olive oil in frying pan. Add thyme. Broil filets. Keep filets in oven for 10-15 minutes.
Cut apples in slices. Remove core. Caramelize, the sugar in the frying pan. Add apple slices. Season the slices with cinnamon and Jamaica pepper.
Place apple slices on preheated plates. Add puff pastry trees and the catfish wraps.
Tip: Substitute catfish with other fish.
Shopping list for 4 persons:
Fish: 4 Pangasius (catfish) filets
Dough: 1 puff pastry dough
Baking Ingredients: 1 tbsp. gold sugar, 1 tbsp. powdered sugar, 4 tbsp. sugar
Spices: Salt, black pepper, 1 tsp. cinnamon, 1 tsp. Jamaica-pepper
Vegetables: 1 bunch spring onions
Herbs: 1 bunch thyme
Oil: 3 tbsp. olive oil
Fruits: 4 apples
Meat: 220 g or 7 Oz. smoked ham
