For the Sunday brunch! The delicious Chef’s Handyman spice combination published in the recipe-blog: Pear pancakes with maple coffee syrup and rosemary!
Sunday will be the lazy day after a busy week. So the Sunday brunch has been moved to noon. To get up and to be ready for lunch will be too much. To start the day smoothly with a delicious brunch will be much better.
Since my first trip to the US, I’ m a great lover of pancakes. Pancake in combination with fruits is my favorite breakfast. During the colder season I prefer pancakes with lukewarm compotes.
What about this great Chef’s Handyman breakfast recipe for the recipe blog: Pancakes with pears, nuts and rosemary maple coffee syrup!
For the pancakes, mix flour, 1/2 cup of cream, eggs, pinch of salt and liquid butter until light. Cool pancakes dough for 15 minutes in fridge. Preheat oil in a frying pan. Place 1 tbsp. of mixture in the middle of the frying pan and fry until golden (approx. 1-2 minutes each side). Keep warm.
For the compote: Peel pears. Cut in half and take out core. Bring 2 cups of water to the boil. Add pears, 4 tbsp. of flavored sugar, 2 tbsp. of lemon juice, 3 fl. Oz. of orange juice and orange rind. Reduce heat and simmer pears for 15 minutes or until soft.
To make syrup: Chop rosemary. Heat 3 fl. Oz. of maple syrup, rosemary and 4 tbsp. of liquid coffee. Add 1 tbsp. flavored sugar. Reduce juice.
Place pancakes and lukewarm pears on preheated plates. Add syrup. Serve with caramelized walnuts. Sprinkle with powdered sugar.

Eggs: 2
Dairy Products: 4 fl. Oz. cream, 1 Oz. butter
Spices: 4 tbsp. flavored sugar, pinch salt
Fruits: 1 lemon, 2 oranges, 6 pears
Baking Ingredients: Maple syrup, Coffee, 4 tbsp. powdered sugar
Herbs: Rosemary
Nuts: 2 Oz. walnuts
