Tangerine risotto, what a great taste! A new cooking recipe for the Chef’s Handyman recipe blog!
Risotto is just delicious! I like the version with taleggio cheese and cream. The tangerine and orange season has been started. What about tangerine risotto? It’s a perfect intermediate course for a Christmas dinner, not only for the vegetarian one. The cubeben pepper does underline the fruity note of the tangerine very well.

Chef’s Handyman cooking recipe for 4 persons: Tangerine risotto!
Chop onions. Heat olive oil in frying pan. Glaze onions. Add rice. Deglaze rice with cognac. Add 1 cup of lukewarm vegetable stock at time, stirring continuously, until each portion of stock is absorbed and the rice is al dente. Reduce to medium heat. Add tangerine rind, tangerine juice and thyme. Simmer for 20 minutes. Cut taleggio cheese in pieces. Fold in cheese. Season the risotto rice to taste with salt and black pepper (e.g. cubeben pepper with an exotic taste). To finish, fold in whipped cream.
Serve in preheated soup plates. Garnish with tangerine rind and thyme.
Shopping list for 4 persons:
Rice: 500 g or 16 Oz. risotto rice
Drinks: 4 tbsp. Cognac
Stock: 1 l or 32 fl. Oz. vegetable stock
Diary Products: 220 g or 7 Oz. taleggio cheese, 2 dl or 7 fl. Oz. cream
Fruits: 2 tangerines
Vegetables: 1 onion
Herbs: 1 bunch thyme
Oil: 3 tbsp. olive oil
Spices: Salt, cubeben pepper (fruity taste)
