The next Chef’s Handyman posts in the recipe blog will contain different new and classic cookie recipes and spices. Ingenious spicy baking recipes from my cooking recipe box will be published. New ideas, food combinations and impressions will be collected in my recipe box. When themes have to be prepared than these ideas will be transformed into new cooking recipes. For all my ad hoc notes I do carry my black box with me. Of course a very old fahioned way to write ideas down. But I like this shabby old book.
Fall is over and the winter is on the doorstep. The whole house will be surrounded by the fragrance of fresh cookies out of the oven. I like this period. To sit next to the fireplace having a cup of tea or coffee with some delicious cookies to taste! It feels so cozy. It’s a bit like heaven on earth. Most people like the sweets. Why not salty or spicy cookies for tea or coffee time? These cookies with rosemary, chili, pecans and lemon are multifunctional…., they can be served for tea and for aperitif as well. That’s the reason, why I like them so much.
Cookies with rosemary, chili, pecans and lemon, the Chef’s Handyman baking recipe for 4 persons:
Makes about 40 cookies:
For the dough, beat butter (room temperature), egg and sugar together until creamy. Fold in chopped pecans and rosemary, lemon rind, chili flakes and a pinch of salt. Add flour and baking powder. Mix well. Form two rolls. Wrap into plastic wrap. Cool in fridge for 30-45 minutes.
Prepare baking sheet with parchment paper or grease it. Cut dough rolls into slices. Place them on baking sheet. Bake at 190°C for 375°F for 10-12 minutes or until golden. Cool on wire rack.

Nuts, Dried Fruits and Vegetables: 1.5 Oz pecans
Fruits: 1-2 lemons
Flour: 10 Oz bleached flour
Dairy Products: 6.5 Oz butter
Eggs: 1 x egg (s)
Baking Ingredients: 1 tbsp. baking powder, 1.5 Oz sugar
Spices: 1 pinch salt, 1 tsp. chili flakes
Herbs: 1 tbsp. rosemary
