The salty version of the Chef’s Handyman quince soup!
Another quince cooking recipe for all the Chef’s Handyman recipe blog readers, with a quince tree in their garden or for quince lovers. After the sweet cooking recipes, some spicy ones will be posted. As announced in the last post I will publish the cooking recipe for the salty quince soup in my recipe blog. I like this tasty soup with the quinces, the sweet potatoes and the coconut milk very much. What a intriguing combination: The sweet taste of the potatoes and the sourness of the quinces! Awesome starter!
Chef’s Handyman cooking recipe, soup with quinces, sweet potato and coconut milk:
Peel quinces. Take out core and cut quinces in pieces. Peel sweet potatoes and cut in pieces. Place pieces in pan. Add orange rind, rosemary and 7 fl. Oz. of vegetable stock. Close pan. Simmer for 15 minutes on medium heat. Remove rosemary. When pieces are soft mix with a hand blender! Strain mixture through colander. Add 4 fl. Oz. of coconut milk. Season the soup with salt and black pepper. Simmer for 5 minutes. When soup is too thick add more vegetable stock or coconut milk.
Shopping list for 4 persons:
Fruits: 8 quinces approx. 18 Oz., 1 orange
Vegetables: 2-3 sweet potatoes approx. 13 Oz.
Vegetable Stock: 10 fl. Oz.
Herbs: 1 bunch rosemary
Asian Ingredients: 8 fl. Oz. coconut milk
Spices: Salt, black pepper
