I don’t like overripe bananas at all. Have you ever tried a curry banana soup? That’s a delicious soup made with overripe bananas. Curry and bananas – what a great combination! The Chef’s Handyman team was very skeptical. Now the curry soup is one of their favorites. Below you will find the recipe to share.
Curry Soup
For the soup, cut the bananas into pieces. Place them into a pan. Add the coconut milk, soy milk and vegetable stock. Simmer on low heat. Blend the soup. Add 1-2 tsp. of curry paste, 1 tsp. of turmeric, salt and black pepper. Add 1 cup of plain yogurt or soy yogurt. Simmer another 10 minutes.
Meanwhile roast cashews in a non-sticking frying pan. When golden remove from heat and chop them roughly. Pour the soup into bowls. Garnish with black cumin and the roasted cashews.
Shopping list for the curry soup for 4 serves: 3 overripe bananas, 1 cup coconut milk, 1 cup vegetable stock, 1 cup soy milk, 1 cup plain yogurt or soy yogurt, 1-2 tsp. curry paste, 1 tsp. turmeric powder, salt, black pepper, black cumin, cashews.
