A Belgian becomes Greek or vice versa
Belgian Waffles. Belgian specialty with a Greek topping, why not! Looking back to relaxing holidays in Greece, I miss the Belgian waffles for breakfast. This great recipe is a gift from my vacation. Now I still have a breeze of summer included in the family brunch buffet. The topping with figs, yogurt, nuts and honey is just delicious. My family and the Chef’s Handyman team were hooked.
Belgian waffles with Greek topping
To make the dough, step by step:
- Heat milk in a pan.
- Add flour, 1 tbsp. of baking powder, sugar, vanilla sugar and a dash of salt. Combine with the milk. Melt butter in a pan and cool for some minutes. Add the butter, 1 tbsp. of chopped peppermint leaves, the yolks and combine all ingredients. Allow the dough to rest for at least 45-60 minutes in the fridge.
- When the dough is ready to use, beat the egg white until stiff. Fold in the egg white.
- Preheat the waffle iron. Apply oil on top. Add the dough as written for the usage of the waffle iron. Bake portion by portion until golden.
For the topping, combine the Greek yogurt with the honey and the walnuts. Place them on the lukewarm waffles. Add figs, pomegranate seeds, pistachios and garnish with peppermint leaves.
Chef’s Handyman tip for the vegan version: Substitute eggs for egg replacements, milk for soy or almond milk, honey for agave or date syrup, butter for plant-based margarine.
Shopping list for 10-15 Belgian waffles with Greek topping: 500 ml or 2 cups of milk or soy or almond milk, 1 tbsp. baking powder, 500 g or 2 cups of flour, 100 g or 3.5 oz. sugar, 1 tbsp vanilla sugar, 1 dash salt, 100 g or 2.5 oz. butter or plant-based margarine, 4 eggs or egg replacements, 2 cups of Greek yogurt, or vegan yogurt, 8-10 figs, 1 pomegranate, 1 bunch peppermint leaves, feta cheese, or vegan cheese, Honey or agave or date syrup, walnuts, pistachios.
