A snack in between, why not? Super food buns are easy to prepare and delicious in taste. Enriched with dried apricots, strawberries and breakfast cereals and the day can start with these energy stars. The superfood buns are healthy snacks during the working day. Super food buns
For the dough, combine 800 g or 3-4 cups of spelt flour, 5 dl or 2 cups of lukewarm water, 3 tbsp. of olive oil, 1 tsp. of coconut blossom sugar, 3 tsp. of salt and 1 portion liquid yeast. Add 2 cups of chopped dried apricots, strawberries, walnuts, cashews and cereals and knead with the dough hook. Place the dough into a bowl and cover with a humid tea towel. Allow the dough to rest for one hour.
When finished sprinkle the dough with flour and knead again. Form 10-12 buns. Prepare a baking sheet with parchment paper. Place the buns on top. Sprinkle them with cereals. Bake the rolls in the preheated oven at 200°C or 400°F for 20 – 25 minutes or until baked through.
Serve the rolls with cold prepared jam. For the jam. Place the strawberries into a bowl. Add 1-2 tbsp. of coconut blossom sugar, lemon rind and lemon juice. Blend the pieces roughly. Cool in the fridge for 1 hour.
Shopping list for 10 – 12 power food buns: 2 lbs. spelt flour, 2 cups of dried apricots, strawberries, cashews and walnuts (all together), 10 tbsp. breakfast cereals with chia, aronia, nuts and flakes, 1 portion liquid yeast or 1 p. fresh yeast, 3 tsp. salt, 2 tsp. coconut blossom sugar, 3-4 tbsp. olive oil.
