Fruity Salad – Vitamins for a good start into 2018
After the festive season, a fruity salad with lots of vitamins is very welcome. A green and orange combination is my favorite. Shredded persimmons, sweet peppers, carrots and salad leaves are carefully piled in bowls or on the plates. Physalis are the cherries on top. The dressing is made with bergamot oranges and coconut milk, which give it a special twist. The Chef’s Handyman team is delighted. What a great start into the new year.
Fruity salad with an exotic twist
For the salad, shred 2 persimmons, 2 sweet peppers, 3 carrots and 200 g or 7 oz. green salad leaves. Add edible flowers, Thai basilic and passion fruits.
To make the dressing, combine, 10 tbsp. of coconut milk, 5 tbsp. of olive oil, 7 tbsp. of bergamot orange juice (or lemon juice), 2 tsp. mustard, chopped herbs, salt and black pepper.
Combine the salad with the dressing, then place the salad in bowls or on plates. Garnish with physalis, edible flowers and herbs.
