Fennel – Mediterranean breeze
Fennel grows all over the Mediterranean as well as in Switzerland. The light licorice aroma fills the house when the veggies with the light green branches are baked in the oven. The seeds are used in many Asian dishes. Fennel is going well as salad or cooked in stock and served as side dish or baked as tart. My favorite is the crunchy tarte version, which is also the preferred dish of the Chef’s Handyman team.
Spicy Fennel Tart
For the vegetables, cut the fennel in thin slices. Place them into a pan. Add water, fennel seeds, salt, laurel leaves and black pepper. Braise the slices on medium heat until they are soft. Drain and cool the slices.
Apply olive oil in small baking or muffin tins. Place 3-4 yufka dough sheets into the tins. Apply olive oil on top.
For the vegetarian filling, combine 1 cup of ricotta cheese, 1 egg, salt, black pepper, chili flakes, 2 tbsp. of ras el honout, chopped herbs and 6 tbsp. of grated Parmesan cheese.
For the vegan filling, 1 cup of soy cream, 3 portion of egg replacements, 6-8 tbsp. of hazelnut or almond ground, salt, black pepper, 2 tbsp. of ras el hanout, chopped herbs and chili flakes.
Spoon the mixture on top of the prepared dough cups. Place the fennel slices in the middle of the filling. Press the overlapping ends of the dough to the middle of the tart. Apply olive oil on top.
Bake the tart in the oven at 200°C or 400°F for 30-35 minutes or until golden.
Shopping list for 4 fennel tarts or 8-10 tarts if a muffin tin will be used: 6 fennel, yufka dough 16 sheets, olive oil, fennel seeds, 2 laurel leaves

Serve the tarts lukewarm with green salad.
