Hold your body in shape with light dishes
Suddenly the summer has arrived. My garden herbs grow like weeds. There is no better option than to garnish the dishes with herbs from the own garden, right? Summer is the season of healthy, light and garden flavored fragrances. Colorful, fruity and tasty are the summer menus. Salads are my favorite snacks during the hot and sunny days. Light dishes also hold the body in shape to fit in your favorite bikini. Get ready, the beaches are calling.
Rich summer salad with tomatoes
For the salad, cut tomatoes and strawberries into slices. Place the salad and the fruits on the plates. Add pistachios and edamame. Garnish the salad with herbs.
To make the dressing, combine 8 tbsp. of olive oil, 1 tsp. of mustard, 3 tbsp. of vinegar, salt, black pepper, chili flakes and lemon zest. Sprinkle the salad with the dressing.
Shopping list for the rich summer salad with tomatoes for 4 dishes: 400 g or 15 oz. of salad leaves, 8 tomatoes, 250 g or 9 oz. of strawberries, 1 cup edamame, 1 cup pistachios, 1 lemon, 8 tbsp. olive oil, 1 tsp. mustard, 3 tbsp. vinegar, salt, black pepper, chili flakes, 1 lemon, herbs like 1 bunch basil, oregano and parsley.
