Home made cookies are still the best! Right? Here we go with one of the Chef’s Handyman’s favorite vegan recipe.
Sandwich Cookies
Makes about, 15 vegan friendly sandwich cookies.
Direction, combine sugar, cold margarine, a dash of salt, 4 tbsp. of orange juice, lemon and orange zest. Add flour and stir to blend. Gather the dough into a ball, wrap, and refrigerate for 30-60 minutes.
Preheat oven to 350°F or 180°C. On a floured surface roll out the dough about 1/8 inch thick. Stamp out shapes or rounds with cookie cutters. Bake until lightly golden, about 8-10 minutes. Transfer to a wire rack and let cool completely before decorating.
Apply jam on the top of one cookie half, then sandwich them.
Melt chocolate in the top of a double boiler or in a heatproof bowl set over hot water. Apply melted chocolate on top of one half. Decorate with shredded nuts and chocolate slivers.
Chef’s Handyman tip: For the vegetarian version, substitute plant based margarine for butter.

Baking Ingredients: 100 g or 3.5 oz. sugar, 200 g or 7 oz. flour, 60 g or 2 oz. dark chocolate, chocolate slivers, salt
Dairy Products: 200 g or 6.5 oz. margarine, vegetable based for vegan friendly cookies, for the vegetarian version use butter
Nuts: 90 g or 3 oz. grated almonds, hazel or walnuts for decoration
Jam: Any jam can be taken
Fruits: 1 organic orange and lemon
Juice: 4 tbsp. orange juice
