Tomato snacks, simple, delicious and easy
There is nothing more to say. Below you will find two easy, simple & delicious tomato snacks to share. The Chef’s Handyman team favorites both of them. Have a try!
Tomato aperitif
Apply agave syrup on each cherry tomato. Use a toothpick to hold the fruits. Grate spicy coated nuts. Turn the prepared tomatoes in the nut mixture. Garnish them with basil and edible flowers.
Shopping list for the tomato aperitif for 4 serves: 20 cherry tomatoes, 5 tbsp. agave syrup, 0.5 cups grated spicy coated nuts, 1 bunch basil, edible flowers.
Tomato snack
Roast baby carrots in the oven at 200°C or 400 F for 25 minutes.
For the omelets, vegetarian version, combine 200 g flour, 0.5-0.75 of cups water/cream mixture (half water, half cream), 1 tsp. of olive oil. Add 1 tsp. of salt, nutmeg and 2 eggs. Mix the dough with a hand blender. Heat a pancake pan. Apply some olive oil in the four gaps in the pan. Add the dough. Leave until cooked on both sides. For the vegan version, substitute cream for soy, coconut or almond milk, for the eggs, use vegan egg replacement.
Place the omelets on preheated plates. Add sliced tomatoes and the carrots on top. Season the tomatoes to taste with salt and black pepper. Garnish with edible flowers, lemon rind and basil leaves. Sprinkle with olive oil and balsamic vinegar.
Shopping list for the tomato snack for 4 serves: 12-16 baby carrots, 3-4 tomatoes, 1 lemon, 200 g flour, 0.5-0.75 of cups water/cream mixture, olive oil, salt, black pepper, nutmeg, 2 eggs, edible flowers, herbs, balsamic vinegar. For the vegan version, egg replacement, substitute cream for coconut, almond or soy milk.
