Fully packed with vitamins!

Traffic lights on plates, why not! Red says eat me! Yellow means, as ususal and green is the urban version, healthy and fully packed with vitamins. A great omelet dish also for our youngsters, even they are on the sweet side, they might not resist with the traffic light dish. Right! The Chef’s Handyman team favorites the green and the red packed version. What is your favorite one?

To make the basic vegan dough, combine 2 cups of soy milk, 1 tsp. of salt, 100 g or 3.5 oz. of flour, 1 tsp. of baking powder and 2 tbsp. of chia seeds soaked in soy milk. Place the dough into 3 different bowls. Shred 1 piece of broccoli and 1 small beet in the cutter. Add the vegetables in two of the prepared dough bowls and combine the ingredients. Leave the neutral one as it is. Now you will have 3 different colors for the omelets. Season the mixture to taste with salt and black pepper.

Heat coconut oil in the prepared non-sticking frying-pan and spoon in the omelet dough. Bake on each side until golden. Place the omelets on a plate and keep warm in the oven.

Cut the kale in pieces. Cook the pieces with the lid on until soft. Add 0.5 cups of soy or almond milk. Blend the kale. Season the mixture with garlic powder, salt and black pepper. Heat coconut oil in a frying pan. Add asparagus cook them until they are soft and tender.

Pile the omelets on preheated plates. Add the kale and garnish with asparagus, bell pepper, sprouts and purslane. Serve with salad.

Chef’s Handyman tip: Double the size of the ingredients, if you like to produce bigger omelets.
