Spicy cake for the coffee break
Chef’s Handyman Hummingbird Coffee Cake. Gingerbread spice and cardamom with a pinch of cinnamon are the soul warmers in winter. As soon as the oven door opens, a comforting fragrance wafts through the house. This is exactly the scent that belongs to the cold Christmas season. So delightful.
Spice cakes go well with the cold winter days. After a long walk, I always crave a cup of coffee or tea. Guests love the Hummingbird coffee cake more than anything. It’s quick to prepare and tastes even better the next day.
Chef’s Handyman Hummingbird Coffee Cake, Here we go:
Ingredients for a cake with a diameter of 20 cm
To make crumble:
- 120 g butter
- 50 g flour
- 50 g brown sugar
- 1 tbsp. cinnamon
- 60 g crushed pecans
Combine all ingredients roughly by hand and place the crumble on top of the cake.
Dough ingredients:
- 120 g brown butter (heat butter in the pan until brown and let cool)
- 2 eggs
- 1 ripe banana
- 100 g canned pineapple
- 1 vanilla sugar or vanilla extract
- 200 g flour
- 180 g sugar
- 50 g brown sugar
- 1 pinch salt
- 1 tbsp. baking powder
- 2 tsp. gingerbread spice
- 1 tsp. ground cardamom
Icing for the cake
- 60 g powdered sugar
- 2 tbsp sour cream
- 1 tbsp milk
Mix all icing ingredients and spread on the lukewarm cake in strokes.
Procedure:
- Mix the wet dough ingredients.
- Mix the dry dough ingredients, combine them with the wet dough ingredients. Brush the cake tin with liquid butter. Add the dough. Place the crumble above the dough.
- Bake the cake in the preheated oven at 180°C for 50-55 minutes. Cover the cake after 45 minutes, it should not turn black.
- Cool and decorate the lukewarm cake with the icing.
