From all exotic fruits, the mango is definitely my favorite one. Mangos are flexible, they can be used for desserts and for spicy dishes as well. My start in the day is accompanied by a huge breakfast. Without breakfast my day will turn into a nightmare. I don’t like lunches so much. I’m fond of spicy dishes, but a homemade marmalade is something where I can put a spell on. I love homemade jams at all. A friend gave me a glass of jam and the recipe, which I will share with you. The Chef’s Handyman team was delighted.
Mango Jam
For the jam, peel 3-4 mango and cut them into pieces. Place them into a pan. Add 5 tbsp of preserving sugar, 1 tbsp of vanilla extract. Simmer the pieces on medium heat. Sprinkle the mangos with lemon juice. When soft, blend them. Fill the jam into glasses. When cooled store the jam in the fridge. Consume the jam within 3-4 weeks.

Shopping list for 2-3 glasses: 3-4 ripe mangos, 4-5 tbsp preserving sugar, 1 lemon, 1 tbsp vanilla extract.
