During the cold season, apple and cinnamon are best friends. What about a lukewarm apple pie? It’s a perfect match for the upcoming beastly weather, right? Why not save calories as well? Birch sugar has 40% less of calories as the white sugar. The quality of taste will be the same. Have a try. The birch sugar can be bought in several stores.
Apple pie
To make the filling, peel 4-5 apples and cut them in slices. Combine them with lemon rind, lemon juice, 5 tbsp. of birch sugar and 1 tbsp. of cinnamon. Add 1 tbsp. of flour and 1 tbsp. of chopped rosemary.
For the dough, place 250 g or 8 oz. of cold plant based margarine (for the vegan version) or butter (for the vegetarian version) in to a bowl. Add 300 g or 10 oz. of flour, 1 tbsp. of baking powder, 200 g or 7 oz. of birch sugar, 1 dash of salt and 100 g or 3.5 oz. of almond ground. Knead with the kneader into crumbles. Apply margarine in a 7-8-inch spring form. Place ¾ of the crumbles into the form. Press the crumbles on the bottom and on the side of the form. Fill in the apple slices. Cover the slices with the remaining crumbles.
Bake the apple pie in the oven at 180°C or 350°F for 50-55 minutes. Serve the apple pie lukewarm with vanilla ice cream.
