Gustav, Zurich, winemaker Tom Litwan
I did not expect so many vegetarian gourmands attending the wine tasting event. Well, time has changed. From my point of view, the vegetarian or vegan kitchen is the most challenging kitchen ever. To get the cherry on top, all ingredients, the texture and the spices must end in a culinary delight. Most guests are very doubtful against vegetarian and vegan dishes. Once jumped over these hurdles, they will explore more and more the world of vegetables and new textures. Serving the right wines is the next step to climb. Vegetarian dishes have a different texture and the spices play an important role.
Both, the wines and the dishes did harmonize through all the serves. My compliments to the head of gastronomy at Gustav Antonio Colaianni and to the winemaker Tom Litwan. It was a great event. My admiration for all chefs which see that vegetarian and vegan lovers are the guests from tomorrow. Please, have a look at the Gustav in Zurich.
