Yeast cake – easy to prepare, delicious in taste
From my point of view, yeast cake is a basic equipment in the kitchen. The cake is great for breakfast or for a break during the afternoon. The filling is the cherry on top. Some like a spicy filling others prefer the sweet variation. One of my favorite ones is the date nut filling. Especially the light taste of cardamom gives the cake the right twist.
Yeast cake with date nut filling
To make the dough, combine 250 g or 9 oz. of flour, 1 cup of lukewarm soy or almond milk, 20 g of liquid plant based margarine, 30 g or 1 oz. of sugar, 1 packet liquid yeast and 1 tsp. of salt. Knead well. Place the dough into a bowl. Cover the bowl with a humid tea towel. Allow to double in size for 1 hour.
For the filling, soak 20 chopped dates in 0.5 cups of water. Season the dates with a dash of cardamom and rose blossom water. Blend them. Chop 150 g or 5 oz. of walnuts or pecans. Combine with the dates.
Prepare a 9-inch baking tin with parchment paper. Roll the dough out. Spread the date jam on the surface. Cut the dough into stripes of two inches in width. Roll them up and place them into the baking tin.
Bake in the oven at 200°C or 400°F for 35 minutes or baked through. Take the cake out and cool on the wire rack. When cooled dust with powdered sugar.
