Apples & Pears
Apples and pears fresh from the trees! A huge basket filled with apples and pears was a gift from a good friend. How sweet, juicy and tasty they were. Lucky those who can harvest their own fruits and vegetables!
Autumn is the heavy-handed season in the garden. All the trees and bushes need their winter cuts. The colorful dresses will fall down and white jackets from the winter cloakroom will soon coat the trees. Raindrops will change into frozen pearls.
The work is done, when each bush and tree will show a proper cut and shape. It takes hours. But then a cup of tea or coffee with a wonderful piece of apple pie will be the right choice to calm down. Right! The Chef’s Handyman team does fully support this decision.
Apple pie with filling, vegetarian
For the apple pie, combine, 100 g or 3.5 oz. of liquid butter, 125 g or 4 oz. of sugar, 3 eggs, 220 g or 7 oz. of flour, 1 tbsp. of baking powder, 1 tbsp. of vanilla sugar, 1 dash of salt, lemon rind and 1 tbsp. of ginger bread spice. Apply liquid butter to a 22 cm or 9 inch diameter pie tin. Fill in the dough.
Cut 3-4 apples into slices. Place them on top of the pie. Sprinkle them with almond flakes and sugar, cinnamon mixture. Bake the pie at 200° C or 400 F in the preheated oven for 60 minutes. Test with a skewer, if dough is still sticking on the surface, bake for another 5 minutes or baked through. Take the pie out and cool on wire rack.
For the filling, whip 1 cup of cream, 200 g or 6.5 oz. of mascarpone, 50 g or 1.5 oz. powdered sugar, 1 tbsp. lemon rind until the mixture does thicken.
Cut the pie into two slices. Spread the cream in between.
