Power Food – bitter flavors

New Year’s pledges are great! Fine dining and power food as well. Healthy might not mean boring or tasteless. The best of taste will be the motto. Sophisticated spices for salads, soups and vegetables make yours guests heart melt. It will be fun, tasting new flavors and ingredients. Chia seeds, always a pleasure

To make breakfast cereals, soak chia seeds in almond, soy or coconut milk overnight. Add agave syrup, orange and lemon zest and vanilla powder. Before you intend to serve add porridge oats, nuts and fruits. I prefer persimmons and orange slices.

Chef’s Handyman tip: Add 1 tbsp. of bitter orange marmalade on top.

Chia Breakfast

Shopping list for 4 serves: 6 tbsp. of chia seeds, 1 ¾ cups soy, almond or coconut milk, 2 persimmons, 3 oranges, 1 lemon, vanilla powder, 4 tbsp. agave syrup, 12 tbsp. porridge oats, 4 tbsp. pecans

Beet soup with a dash of horseradish

For the soup, cut beets and potatoes in cubes and place them into a pan. Add 2 cups of vegetable stock and 1 cup orange juice. Simmer on medium heat for 15 to 20 minutes or cooked through. Blend the cubes. Season the soup to taste with salt and black pepper. If the soup will be too thick add more vegetable stock. To garnish combine whipped soy cream with horseradish. Decorate with sprouts. Serve the soup in glasses or cups.

Shopping list for the beet soup for 4 serves: 6 middle sized beets, 6 potatoes, 1 cup orange juice, 2 cups vegetable stock, sprouts, 1 cup whipped soy cream, grated horseradish, salt, black pepper.

Power Salad

To make salad, filet oranges, cut the radicchio and the kale into bite-sized pieces. Add roughly grated nuts and avocados cut into slices or rounds. Place all ingredients on plates. Garnish with pomegranate seeds, sprouts and peppermint leaves.

For the dressing, combine, 12 tbsp. of olive oil, 3 tbsp. of orange juice, 1 tbsp. of lemon juice, 2 tbsp. of apple vinegar, 1 tbsp. of mustard, grated parsley, peppermint, lemon zest and 1 tbsp. of water. Season the dressing to taste with salt and black pepper. Serve the salad with the dressing.

Shopping list for the power salad for 4 serves: 4 oranges, 1 lemon, 4 avocados, 3 radicchios, kale, 1 pomegranate, sprouts, 1 bunch peppermint, 4 tbsp. pecans, 12 tbsp. olive oil, 2 tbsp. apple vinegar, 1 tbsp. mild mustard, salt, black pepper.
