Tomatoes are all-rounders
Tomatoes bring colors on plates. They can be used for savory, spicy and also for sweet meals. Tomatoes are great in taste. After a long working day, nobody will be in a mood to cook a gourmet menu, right? What about a tomato snack, which will be prepared within no time? Much better! Tomato sauce on stock will be a great idea as well, especially for the long winter season. Stuffed tomatoes or polenta with roasted tomatoes on top are also delicious snacks.
Tomato snack
For the tomato snack, cut cherry tomatoes in half. Ready-made rectangle shaped pizza dough has been taken. Cut the dough in two pieces. Place them into prepared baking tins. Apply the tomato halves on top. Bake in oven at 200°C or 400°F for 15-20 minutes or until golden. Take them out. Sprinkle with olive oil, garnish with green pesto sauce. Season the snack to taste with salt and black pepper. Decorate with basil. Serve with green salad.
Shopping list for 4 serves, pizza dough, 2 x 1 rectangle shaped ready-made pizza dough, 1 cup of ready-made green pesto sauce, 4-6 tbsp. olive oil, 1 bunch basil, salt, black pepper.

To keep the summer in glasses, it will be a great idea to store tomato sauce. Especially for the cold winter season, when no fresh tomatoes are available! Actually why not double the portions? During a busy week, there will be not time to simmer tomato sauce for hours. It will be very convenient grabbing a glass from the storage. The stored tomato sauce can be used for several occasions. Also in summer a cold tomato soup might be very refreshing.
Roasted tomatoes are my favorites. No other way to prepare tomatoes will give such a nice flavor. To serve them with white polenta as side dish or as main course will delight your guests.
