Avocado fruits are not everybody’s darling. When spotted the real beauty and texture of the fruits then it turns into love at second sight. With chocolate as dessert or on the fruity side with kiwis and pomegranate seeds or as salad; all variations are great in taste. What about avocado jam? All recipes are made for 4 serves. To make avocado chocolate cream, melt 1 bar of chocolate in a bain-marie. Whip one cup of beatable soy cream. Keep some spoons for decoration. Peel 4 avocado fruits and remove the seeds. Place the pieces into a bowl. Blend them. Fold in the melted chocolate and the whipped cream. Add 1-2 tbsp. of vanilla extract. Fill the chocolate cream into glasses. Garnish with raspberries and whipped cream. The dessert is not too sweet and with a smooth texture.
For the avocado kiwi starter, cut 4 avocado fruits, 4 kiwis into small pieces, 4 kiwis into slices. Sprinkle with lemon juice and black pepper. Combine the kiwi and avocado pieces. Garnish the plates with sprouts. Place one portion on top of the sprouts. Use professional cooking rings, to give a nice shape. Garnish with kiwi slices, herbs, edible flowers and pomegranate seeds. It’s a great starter!
Salad with avocado, yellow cherry tomatoes and kiwis, decorated with edible flowers. To make salad for 4 serves, place 200 g or 7 oz. of green salad, 8 kiwis cut in slices, 12 yellow cherry tomatoes in half and 4 avocado fruits shaped into balls. Place all ingredients on plates. To make lemon dressing, combine 8 tbsp. lemon juice, 1 tbsp. of agave syrup, lemon rind, 6 tbsp. of fennel oil, salt, black pepper and peppermint leaves. Sprinkle the dressing over the salad. Decorate with edible flowers. It’s a real eye candy. For the vegetarian version, add eggs and or mozzarella cheese.
To make avocado jam, cut 20 oz. of avocado fruits into slices. Place them into a pan. Add 600 g or 20 oz. of preserving sugar. It depends on the brand, follow the instructions like written on the wrapping. Add 1 tbsp. of citric acid, 1 tbsp. of vanilla extract and a dash of black pepper. Bring the mixture to the boil. When the sugar is melted, blend the mixture. The jam will get a nice and smooth texture. Then simmer again on medium heat until the jam gelatinizes. Fill in prepared preserving glasses. The jam is great for breakfast. Your guests will be delighted.
