Cookies with Eastern flavor. Chickpea flour is excellent for cookies. Together with cardamom, cinnamon and rose petals, it makes a perfect team. If you don’t like sweet dishes, you might like these cookies. The crumbly dough and the spices give them that certain something. Just right when it gets cold outside and you long for a cup of tea. Chai also goes very well with them. The Chef’s Handyman Team ate all the test appetizers during the coffee break and was delighted.
Cookies with Eastern Flavor
Cream olive oil, sugar, cinnamon and the crushed cardamom for about 4 minutes. Then add the flour and baking powder. Knead to a dough. If the mixture is too dry, add another 1 tablespoon of olive oil. Then form the dough into a roll and wrap it in cling film. Let it rest for 1-1.5 hours in the refrigerator.
Take out and cut into slices about 1 cm wide. Put them on a baking tray covered with baking paper.
Preheat the oven to 150° C. Bake the sables for 10 minutes on the bottom shelf. Afterwards, bake for another 10-12 minutes on the upper rack.
Remove and cool on a cake rack. Sprinkle each slice with a drop of agave syrup. Decorate with the crushed almonds and dried rose petals.
Serve with a Chai Latte or herbal tea.

- 1 teaspoon baking powder
- 6 cardamom capsules crushed in a mortar
- 1 pinch of cinnamon
- 1/3 cup of brown sugar
- 1/4 cup of olive oil
- 1 cup chickpea flour
- Agave syrup
- dried rose petals
- 15 unpeeled almonds
