The first cherries have arrived
Cherry strudel a summer dream. Cherries are only for a short time in season. That’s why I never think about, what to bake with them. So I buy the fruits immediately. At home I look for a delicious recipe. I have so many in my recipe box. In the fridge I usually have filo or strudel dough in stock. It doesn’t always have to be an apple filling. Other fruits will do as well. Fruity sweet with a crispy dough, that’s how I love the strudel.
Cherries in strudel dough
Apply three thin strudel leaves with olive oil and put them on top of each other. Spread dried apple pomace or grated hazelnuts in the middle. Combine 150 g cream cheese, one egg, 2-3 tbsp. sugar, lemon grated, 1 tsp. vanilla extract. Pour the mixture into the middle of the dough. Pit 10-12 cherries and place them on top of the dough. Fold the ends of the dough into a rose and drizzle with olive oil. Dust with sugar.
Chef’s Handyman tip: It’s easier to use a round ovenproof dish. Sprinkle this with olive oil and place the dough in the middle. The rest of the dough is overhanging and is folded into a rose at the end.
Bake in a preheated oven at 200°C for about 25 minutes. If the dough gets too dark, cover with foil and continue baking.
Cherry strudel, shopping list for 2 dishes
- 1 pack filo or strudel dough
- 150-200 g cream cheese
- egg, 1
- 4-5 tbsp sugar
- vanilla extract, 1 tbsp.
- lemon, 1
- 12-15 cherries
- 5 tbsp apple pomace or grated nuts, hazelnuts or almonds
