Pasta di Semola di Grano Duro with Vegetables
Bring water in a large pan to the boil. Add salt and the pasta. Cook on medium heat until al dente. Drain the semolina pasta.
Meanwhile chop 4 carrots, 1 sweet pepper and one piece of fresh ginger. Heat olive oil in a non-sticking frying-pan. Add sage leaves and thyme. Cook for some minutes, then add the chopped vegetables. Simmer on medium heat for 10 minutes. Add the pasta, season to taste with herbs, salt, black pepper and chili flakes. Sprinkle with olive oil.
Place the pasta on plates. Garnish with herbs. For the vegetarian version, add parmesan cheese.
