Salads – playing with colors
Colors on the plates are treats for the eyes too, right! Colors are the highlights of the summer salads as well. Garden radish is not red anymore but white, why not. Arugula has a dark red color green is lost. Radicchio has changed from yellow to pink. What a mess. It’s hard to belief but both salads below do have the same ingredients with different colors. The taste is not the same say the testers. Is the perception right or do the colors lead to a different direction? Difficult to say means the Chef’s Handyman team. Try to find out!
Next invitation I will surprise my guests with the same salad in different colors.
Colored summer salad
For the salad, cut radicchio, arugula and herbs into pieces and place them on plates. Cut the radish into thin slices. Decorate the salad with edible flowers, nuts and pomegranate seeds.
To make the dressing, combine 6 tbsp. of olive oil, 2 tbs. of lemon juice, lemon zest, 3 tbsp. of white balsamic vinegar, 1 tsp. of mustard, salt, black pepper and chopped garden herbs. Sprinkle the dressing over the salad.
Shopping list for the colored summer salad for 4 serves: 1 radicchio, 4 chicories, 1 bunch arugula, 2 lemons, 1 tsp. mustard, salt, black pepper, fresh garden herbs, 1 bunch radish, 4 tbsp. roughly grated walnuts, 1 pomegranate, edible flowers
