Fast food with homemade soups
Soups forever! I’m keen on soups, especially veggie soups with ingredients from the own garden. Soups as appetizer are light and easy do digest. I prefer light meals, which can be prepared within no time. After sports, I will not be in the mood to cook great menus. Working weeks can be very busy as well. There will be no time left for cooking or shopping. Soups can be prepared in advance and stored in the fridge. The Chef’s Handyman team favorites the ravioli soup. Get in spired and have a try.
Hearty vegetable soup with chickpeas, beans and noodles
To make vegetable soup, cut 5 carrots, 5 celery stalks, 1 kohlrabi, 6 potatoes, a handful of beans and 1 sweet pepper in small pieces. Chop 1 onion and glaze it with olive oil in a large pan with lid. Add 1.5 l or 10 cups of vegetable stock, 3 laurel leaves, 3 cloves, rosemary, thyme and the vegetables. Cook for 15 minutes on medium heat. Add noodles, cook for another 15 Minutes. Add 1 cup of chickpeas, 1 cup of beans and 1 cup of corn. Season the soup to taste with salt, black pepper and chili powder. Add parsley, cilantro and peppermint leaves before you intend to serve. The soup is very refreshing and great after sports.

Ravioli soup, fast and easy
To make ravioli soup, chop one onion or garlic clove and glaze the pieces with 4 tbsp. of olive oil. Add 1.5 l or 10 cups of vegetable stock. Add 3 laurel leaves, 2 cloves and lemon thyme. Cook on medium heat for 15 minutes. Season the soup with salt and black pepper. Add 20 – 30 fresh ravioli and a handful of edamame (cooked soy beans). Simmer on low heat for another 15 minutes. Add lemon zest and cilantro before you intent to serve. The soup goes perfect as starter or light dinner after sport.
Shopping list for the ravioli soup 4 serves, 10 cups of vegetable stock, salt, black pepper, laurel leaves, cloves, 1 lemon, 1 onion, lemon thyme, 1 cup edamame, cilantro, 20-30 fresh ravioli (pesto or basil)
For the vegan friendly version, pasta dough can be prepared without eggs. It takes slightly more time to prepare.
Vegan friendly dough and filling
To make pasta, combine 300 g 10 oz. of flour, 200 g 7 oz. of semolina flour, 1 tbsp. of sea salt, 4-5 tbsp. olive oil, 180 ml, ¾ cup of lukewarm water. Spoon in the water and knead until the dough will be soft and firm. Store in fridge for 1 hour, then roll the dough out and cut into small squares. Place the filling into the middle and form a little bag.
To make vegan friendly filling, place 100 g or 3.5 oz. of silk bean curd into a bowl. Add 5 tbsp. of grated walnuts or almonds, 2-3 tbsp. of cold sweet potato puree or potato puree. Season the puree to taste with ras-el hanout, salt and black pepper. Alternate add green pesto sauce. The filling should be dry not too wet. Place some spots into the middle of pasta squares and form pasta bags. Cook them in the vegetable stock for 3-4 minutes on low heat.
